Collect ingredient: 1 medium/large cucumber
Collect ingredient: Salt
Collect ingredient: Medium Garlic Clove
Collect ingredient: Lemon for Juice
Collect ingredient: Greek Yogurt 300ml
Collect ingredient: Mint leaves (preferably fresh and rinsed from the garden or window-sill). The leaves of three small sprigs should do it.

Collect ingredient: (Optional) A few salt crystals.
Collect ingredient: Pitta Bread or Vegetable crudités. (Carrot/Celery).
Collect utensil: Sieve.
Collect utensil: Bowl to mix the lovely Tzatziki.
Collect utensil: Spatula for folding the ingredients.
Collect utensil: Teaspoon for scooping out cucumber seeds.
Collect utensil: Chopping board and knife.
Ensure: Your hands are washed.
Ensure: You have lots of love in your heart to put into the Tzatziki.
Ensure: You go slowly and take care.
Ensure: You have a clean work surface and keep a clean work surface.
Ensure: You are ready to clean up as you go along.
Ensure: You remember to taste everything as you go along, especially the final Tzatziki to ensure its to your taste.
Rinse the cucumber, then cut the ends off, then peel off the green skin.
Cut the cumber in half and then in half lengthways.
Scoop out the seeds with a spoon and discard the seeds. Seeds will make a Tzatziki not nice, wet and runny.
Grate the cucumber coarsely with nice long strips.
Place the grated cucumber in a sieve sprinkling with a little salt as you go.
Leave the cucumber to drain for half an hour. We don’t want the water from the cucumbers else the Tzatziki will be too runny.
Clean up and prepare for next steps.
Gently squash out any excess water from the cucumbers and place in a bowl. Again we ar doing this as we need the Tzatziki not to be runny.
Add the cucumber, which now has less water into a bowl.
Crush a garlic glove. (Remove skin of the clove, chop with a knife, sprinkle on a few salt crystals if you have some, then rub it all together). Be sure to have a quick taste, yum.
Add it to also to the bowl.
Squeeze some lemon juice into the bowl.
Fold in the Greek yogurt. Greek yogurt should be thick as the Tzatziki needs to be thick. Strain out on liquid if not).
Finely chop and then fold in the leaves from 3 sprigs of mint and add to the Tzatziki.
Lastly, season and fold into the Tzatziki a little cayenne pepper, just a little shake to make it nice and tangy.
Cover bowl and chill for at least one hour.
Go and do something pleasurable.
Lightly toast then cut some Pitta Bread into strips. Or cut some vegetable crudités.
Remove the Tzatziki from the fridge put into a smaller bowl then dress with a drizzle of olive oil. (Along with a sprinkle of paprika and a sprig of Mint (or Dill) if you want to go overboard).
Relax, dip, eat and enjoy.
