Identify: Work surface for kneading bread.
Collect: 4 cups (1 lb, 4 oz / 566 grams) Organic All Purpose Flour.
Collect: 1½ Tablespoons* (17 grams) instant yeast.
Collect: 2 Tablespoons Granulated Sugar, Brown Sugar or Honey.
Collect: 2 Tablespoons Sunflower Oil, or Melted Butter.
Collect: 4 cups (2 pounds / 908 grams) warm Milk.
Collect: 6 cups (1 lb, 13 oz / 825 grams) Bread Flour.
Collect: 1½ Tablespoons (22 grams) salt.
Place the plain flour, yeast, and sugar into a large bowl.
Use a wooden spoon to stir together the all-purpose flour, yeast, and sugar.
Make a small well in the middle of the flour mixture and pour in the Oil (or) Butter and the milk.
Stir and mix vigorously, adding 1 cup of the flour at a time and stirring it in.
Add 3 to 4 cups of flour more continue stirring for 6 minutes.
Stop once you have a sticky dough.
Cover the bowl with a damp tea towel.
Leave in a warmish place for 20 minutes.
Add the salt and 1 more cup of flour and stir in solidly. If sticky after stiring. Add a little more flour.
Place dough on a floured work surface, knead it with floured hands for 10 minutes.
Continue to knead until the dough is soft, not sticky, use small amounts of flour if required.
Get clean bowl and sprinkle a little flour around the inside. Then place in the dough.
Cover with a damp cloth, put somewhere warm, remember the size now and wait until it doubles.
Wait about one hour 15 minutes or until the dough has doubled in size, and in general a finger poke results in the mark staying there. (The longer it takes the tastier the bread).
Put back onto floured surface flattening slightly, removing any large air bubbles if they exist.
Divide the dough into three equal pieces.
Shape the dough into loaves and place into the bread tins.
Cover the loaves with a damp cloth and let rise until the dough is springy, approx 60 minutes.
Bake at 375° for 35 minutes, the bread loaves for this recipe should sound hollow if you tap the bottom.
Leave for 40 minutes.
